Pistachio & Chocolate Cookies

Crunchy pistachios meet rich dark chocolate in these buttery, soft-baked cookies. A sprinkle of sea salt takes them to the next level.

Pistachio & Chocholate

📝 Ingredients

  • 180g butter
  • 100g brown sugar
  • 100g white sugar
  • 2 eggs
  • 1 pack vanilla sugar
  • 250g flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 180g dark chocolate (chopped)
  • 50g pistachios, roughly chopped
  • Sea salt for sprinkling

  • Dough keeps in fridge up to 3 days

👩‍🍳 Instructions

  1. Cream together butter and sugars. Add vanilla sugar and eggs, beat until light and fluffy.
  2. Fold in flour, baking soda, and salt.
  3. Add chopped chocolate and pistachios, mix to combine.
  4. Portion into 1 tbsp dough balls and chill for at least 1 hour.
  5. Preheat oven and place dough balls on a lined baking sheet. Top with extra chocolate or pistachios (optional).
  6. Bake at 180°C for 10–12 minutes. Sprinkle sea salt on warm cookies.
