Pistachio & Chocolate Cookies
Crunchy pistachios meet rich dark chocolate in these buttery, soft-baked cookies. A sprinkle of sea salt takes them to the next level.

📝 Ingredients
- 180g butter
- 100g brown sugar
- 100g white sugar
- 2 eggs
- 1 pack vanilla sugar
- 250g flour
- 1 tsp baking soda
- 1 tsp salt
- 180g dark chocolate (chopped)
- 50g pistachios, roughly chopped
- Sea salt for sprinkling

- Makes approximately 20 cookies
- Dough keeps in fridge up to 3 days
👩🍳 Instructions
- Cream together butter and sugars. Add vanilla sugar and eggs, beat until light and fluffy.
- Fold in flour, baking soda, and salt.
- Add chopped chocolate and pistachios, mix to combine.
- Portion into 1 tbsp dough balls and chill for at least 1 hour.
- Preheat oven and place dough balls on a lined baking sheet. Top with extra chocolate or pistachios (optional).
- Bake at 180°C for 10–12 minutes. Sprinkle sea salt on warm cookies.
