Chocolate & Cherry Brownies

Fudgy, rich brownies packed with dark chocolate and juicy cherries. Best made with fresh cherries, but jarred work great too!

Chocolate Cherries

📝 Ingredients

  • 70g butter
  • 230g granulated sugar
  • 2 large eggs + 1 egg yolk
  • 1 tsp vanilla sugar
  • 75g vegetable oil (e.g. sunflower)
  • 70g cocoa powder
  • 70g flour
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 150g dark chocolate chips (or more!)
  • 70–100g cherries (fresh or jarred)

  • Bakes in a standard square brownie tin
  • Let cool completely before slicing for clean cuts
  • Delicious warm as a dessert with ice cream too!

👩‍🍳 Instructions

  1. Preheat oven to 175°C (fan). Line or grease a square baking dish.
  2. In a bowl, melt butter with sugar using a microwave or double boiler. Let cool slightly.
  3. Whisk in oil, eggs, egg yolk, and vanilla sugar until smooth.
  4. Sift cocoa powder, flour, cornstarch, and salt over the mixture. Fold in gently.
  5. Stir in chocolate chips and cherries.
  6. Spread batter into prepared pan and bake for around 30 minutes, until set but still fudgy.
  7. Cool fully before slicing — or enjoy warm with a spoon!
