Blueberry & Crumble Muffins

Blueberry Muffins

Ingredients:

240 gr all-purpose flour
150 gr granulated sugar
50 gr brown sugar
2 tsp baking powder
0.5 tsp baking soda
0.5 tsp salt
2 eggs
50 gr butter melted
60 gr oil (sunflower)
130 ml buttermilk
1 pack vanilla extract
360 gr blueberries (frozen or fresh)

For the crumble:
30 gr butter
30 gr brown sugar
50 gr flour

Steps:

1. Whisk eggs & sugar until light and fluffy.
2. Add butter & oil & buttermilk and mix until combined
3. Sift flour, salt, and baking powder on top and gently stir into the wet mix
4. Add the blueberries and gently fold in
5. For the streusel, combine all ingredients and knead with your hands till crumble texture. Sprinkle on top of the muffins
6. Bake at 170 degrees Celsius for 20-25 minutes
7. Enjoy warm ✨
