Blueberry & Crumble Muffins

Fluffy muffins packed with juicy blueberries and topped with a buttery streusel crumble. Perfect for breakfast or a cozy treat.

Blueberry Muffins

📝 Ingredients

  • 240g all-purpose flour
  • 150g granulated sugar
  • 50g brown sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 eggs
  • 50g melted butter
  • 60g oil (sunflower)
  • 130ml buttermilk
  • 1 pack vanilla extract
  • 360g blueberries (fresh or frozen)

For the Crumble

  • 30g butter
  • 30g brown sugar
  • 50g flour

👩‍🍳 Instructions

  1. Whisk eggs and sugars until light and fluffy.
  2. Mix in melted butter, oil, and buttermilk until combined.
  3. Sift flour, baking powder, soda, and salt. Fold into wet ingredients.
  4. Add blueberries and gently fold in.
  5. For crumble: mix ingredients by hand until crumbly. Sprinkle on top of muffin batter.
  6. Bake at 170°C for 20–25 minutes.
